Gelatinized Tri-Color Maca Additional Information

Our gelatinized tri-color maca products are made from about 40% yellow, 30% red and 30% black maca roots.   As with all of our maca, these roots are grown in a remote pristine part of the Peruvian Andes using traditional time-honored farming techniques.    The tri-color products are pre-cooked maca at its best.  We call them “heritage harvest” since the three color blend is the way people have eaten maca for 1000s of years.   pre-cooked-maca-powder-and-capsules.jpg

How Is Gelatinized Tri-Color Maca Different from Raw Maca?

Gelatinization is a process in which dried maca roots are heated to temperatures of about 160F / 70C in special ovens.  The heat used in this process causes the starch molecules in the maca root to irreversibly dissolve, leaving behind a product that is essentially starch free and easier to digest than raw maca products.   Maca products made from raw maca powders, on the other hand are never exposed to high temperatures.   This preserves nutrients like vitamin C and enzymes at their highest levels, but does leave the starch intact which can irritate the digestive system of some people.  We’ve seen that raw maca can cause minor stomach upset for about 5-10% of people.  If you generally have a sensitive stomach or if you have any issue digestion starch, the gelatinized or pre-cooked maca root products are a much better choice for you. 

What Are The Advantages and Disadvantages of Gelatinized Tri-Color Maca?

There are 2 main advantages of using a gelatinized product over a raw maca product.   First, as we’ve just mentioned, because the starch content is absent, gelatinized maca products are easier to digest.   This makes them a good solution for people with any digestive issues.    Second, gelatinization does concentrate some of the nutrients in maca, including some of the unique amino acids found in the root.    Since the starch content is removed, gram for gram, gelatinized maca contains a bit more nutrient content than raw maca.   

The main disadvantage of gelatinized maca when compare to raw is that all heat sensitive nutrients including vitamin C and enzymes are destroyed in the gelatinization process.   

Note: it is important to understand that “gelatinization” has nothing to do with “gelatin” and our gelatinized maca products remain 100% vegan.   

Is Tri-Color Gelatinized Maca Right For You?

Tri-color maca is an excellent choice for someone just getting started with maca.  Because it contains all 3 colors of maca root, it gives you exposure to each color’s differing nutrient profile.   Also, it’s the least expensive of all maca types.  That’s because it does not require the extra step of being separated by color.    In addition, the fact that these products are pre-cooked maca root products (a.k.a. gelatinized maca root) means that they are easier to digest and have a slightly more mellow flavor.   That makes it easier for a newcomer to maca to continually take maca and begin to see its benefits for themselves.
